Nutty Caramel Popcorn SliceWe love this recipe because it is so simple and requires zero baking. Just throw a few ingredients together, mix them up, press them into a rectangle dish and you have the most delicious nutty snack ever! The lightness of the popcorn paired with the rich, velvety peanut caramel is a combination of dreams. Drizzled with a little dark chocolate to balance out the sweetness it will be loved by everyone. InstructionsFollow the instructions on the packet of your popcorn to make about 8 - 10 cups of popcorn. You could also use pre-made/ pre-packaged popcorn if you prefer. The cobs brand is great. In a heatproof bowl over a pot of simmering water gently melt together the peanut butter, rice malt syrup and coconut oil. Once all melted and runny remove from the heat. Transfer the peanut butter mixture along with the popcorn into a large mixing bowl. Add the vanilla and sea salt and mix well to combine all the ingredients. Spoon the sticky, popcorn caramel mixture into a lined rectangle container (about 15x30cm) and gently press down with the back of a spoon until it is well packed down. Place in the fridge to set up and chill for about 30 minutes. Melt the dark chocolate and gently drizzle over the top of the set slice. Place back into the fridge and allow chocolate to harden. Slice into 15-18 slices. Store in the fridge in an airtight container or alternatively store in the freezer. It actually tastes great frozen, a little more brittle in texture or alternatively opt for the more soft caramel texture by storing in the fridge.
