A super fresh summer salad with an injection of green. An endlessly customisable salad you’ll never tire of.
Prepare soba noodles and cool as per packet instructions
Add the cucumber, spring onions, and coriander to a large salad bowl
In a smaller bowl add the coconut yoghurt, sesame oil, rice wine vinegar, maple syrup, tamari, and white miso. Mix together thoroughly.
Add the soba noodles and dressing to the salad bowl and mix.
Serve immediately or store in the fridge and use within 3 days.
For extra nutritional value we suggest adding chopped broccoli or edamame (really any green you want will work great!)
