Super Green Spaghetti 4 people Prep: 5 minutes Cook: 30 minutes Cane Sugar Free Vegan Vegetarian Brighton up your day with this vibrant super green spaghetti dish. Made with Organic Almond Original Ingredients 1 leek, diced 2 garlic cloves 1 cup peas 2 cups spinach 1 cup basil, firmly packed 1 cup cashews, soaked 1/4 cup nutritional yeast 1 Tbsp apple cider vinegar 1 cup Pureharvest Organic Almond 1/2 tsp chilli flakes 1 tsp sea salt 1 tsp black pepper 300 g spaghetti Instructions Add a little oil in a pan over medium heat. Add in leek, garlic and sauté for 5-7 minutes until soft and fragrant. Add in peas and sauté for a further 2 minutes. Transfer 1/2 of the leek pea mixture to a blender with the rest of the ingredients. Blend on high until smooth. Cook the pasta to packet instructions. Save 1/2 cup pasta water. Add the sauce back into the pan, along with the pasta water and cooked spaghetti. Turn off heat and toss to combine. Serve with some cashew parmesan and fresh basil. Share this recipe Print recipe

Super Green Spaghetti

Brighton up your day with this vibrant super green spaghetti dish.

Add a little oil in a pan over medium heat. Add in leek, garlic and sauté for 5-7 minutes until soft and fragrant. Add in peas and sauté for a further 2 minutes.
Transfer 1/2 of the leek pea mixture to a blender with the rest of the ingredients. Blend on high until smooth.
Cook the pasta to packet instructions. Save 1/2 cup pasta water.
Add the sauce back into the pan, along with the pasta water and cooked spaghetti. Turn off heat and toss to combine.
