Brighton up your day with this vibrant super green spaghetti dish.
Add a little oil in a pan over medium heat. Add in leek, garlic and sauté for 5-7 minutes until soft and fragrant. Add in peas and sauté for a further 2 minutes.
Transfer 1/2 of the leek pea mixture to a blender with the rest of the ingredients. Blend on high until smooth.
Cook the pasta to packet instructions. Save 1/2 cup pasta water.
Add the sauce back into the pan, along with the pasta water and cooked spaghetti. Turn off heat and toss to combine.
Serve with some cashew parmesan and fresh basil.
