Add all the sauce ingredients into a bowl/jug and mix well until combined.
Heat oil in a pan over medium heat. Add in tofu with a pinch of salt. Fry off the tofu for about 10-15 minutes until its gotten golden in colour. Add in capsicum, carrot and spring onion, and sauté for about 5 minutes.
Add in cooked noodles and sauce and fry it all together for about 5 minutes until the sauce has thickened.
Serve immediately with some chilli flakes and the rest of the spring onion.
