Say hello to our new favourite healthy cookie. Golden brown on the outside, soft and chewy on the inside. We highly suggest giving them a go and deciding for yourself. With just a few simple ingredients these cookies are quick and easy to make and the rolled oats provide a great natural energy boost. Our chunky oat cookies are a simple, tasty, effortless and healthy snack.

Wet ingredients
1 egg / chia egg
1/3 cup Pureharvest Rice Malt Syrup,
1/4 cup neutral vegetable oil
1 tsp vanilla extract
Dry ingredients
1 cup rolled oats
3/4 cup wholemeal spelt flour
1 tsp baking powder
1/4 tsp sea salt
1/2 cup dark chocolate chips

Preheat the oven to 175 C and line a baking tray with baking paper.

In a large bowl, beat together the wet ingredients together and set aside.

Mix together the dry ingredients. Add the dry ingredients to the wet ingredients. Mix well to combine.

It is a relatively wet dough so we recommend using two spoons to make your cookies. This recipe makes about 8-10 cookies.

Spoon dollops of dough into the baking tray (leaving a little bit of space between them) then bake in the oven for 15 minutes or until golden brown. The base of the cookie should also be brown on the bottom.

Allow to cool completely before storing in an airtight container.
