Tofu Scramble

Tofu Scramble is fantastic way to eat more plant based foods and get in a nutritious breakfast at the same time. Enjoy this recipe for a wonderful egg free, dairy free, vegan breakfast that’s packed with protein and long lasting energy.

225 g firm organic tofu
2 tsp Pureharvest Organic Tamari,
1/2 tsp ground turmeric
1 pinch ground pepper
1/2 tsp cumin
1/2 tsp chilli flakes (optional)
1/2 Tbsp coconut oil (for frying)
To serve
2 slices toast
1 tsp fresh coriander
Few slices fresh chilli

Mash the tofu in a bowl with the back of a fork. Add the Tamari and spices and mix well.

Heat a frying pan on medium to high heat and add the coconut oil. Add the tofu, sauté until heated through, about 3-5 minutes. Stirring regularly.

Place the toast onto a plate and top with tofu scramble and any of your favourite toppings. We love a little sliced chilli and coriander for a lovely fresh addition.
