Satisfying and nutritious, this vegetarian bolognese really hits the spot. It’s even a hit with carnivores!
1 capsicum finely diced
1 medium carrot finely diced
1 onion finely diced
1 clove garlic minced
1 cup lentils soaked overnight
1 large tbsp tomato paste
1/2 cup red wine
1 can tomatoes
1 packet wholemeal spaghetti
In a large saucepan heat a tablespoon of olive oil, add the onion and garlic and sautee for 5 minutes.
Add the carrot, capsicum and lentils and sautee for another 2-3 minutes.
Add the red wine and burn off the alcohol for another 2 minutes.
Add the tomato paste, canned tomatoes and water and bring to the boil.
Once boiling, reduce the heat and simmer, with the lid on, for about 40 minutes, or until the lentils are soft.
When the lentils are almost done, cook the spaghetti according to the packet instructions.
Season the bolognese with salt and pepper and serve.
