Chocolate Chip Banana Bread Bars

Soft, fudgy, and made with simple, wholesome ingredients! These gluten-free bars are the perfect mash-up of banana bread and a brownie, loaded with melty dark chocolate chips and the perfect cozy cinnamon kick.

Ingredients

  • 3 ripe bananas, mashed (about 1 1/4 cups)
  • 1/4 cup Pureharvest Organic Rice Syrup
  • 1/4 cup nut butter
  • 2 Tbsp coconut oil, melted
  • 1 tsp vanilla extract
  • 1 1/2 cups almond flour
  • 1/2 cup oat flour
  • 1 tsp ground cinnamon
  • 1/2 tsp baking soda
  • 1/4 tsp sea salt
  • 1/2 cup dark chocolate chips

Optional add-ins

  • 2 Tbsp chopped walnuts or pecans
  • Swirl of chocolate hazelnut butter on top

Instructions

  1. Preheat oven to 175°C (350°F). Line an 8x8-inch baking pan with parchment paper.

  2. In a large bowl, mash bananas. Stir in rice syrup (or honey), nut butter, melted coconut oil, and vanilla until smooth.

  3. Add almond flour, oat flour, cinnamon, baking soda, and salt. Stir until just combined.

  4. Fold in chocolate chips and optional nuts.

  5. Pour batter into the lined pan and smooth the top.

  6. Optional: Add dollops of chocolate hazelnut butter and swirl with a knife.

  7. Bake for 22–26 minutes, or until edges are golden and a toothpick comes out mostly clean.

  8. Cool in pan for at least 20 minutes before slicing—they firm up as they cool.
