Filling
InstructionsIn a food processor, process the peanuts into small pieces. Add the medjool dates and rice malt syrup and process again until it form a dough. Press into a lined baking tray of desired size. You could also make this as a round cake, or even individual bites in a mini cupcake tray. To make the the filling add all of the ingredients to a large bowl. Keep mixing until it all comes together. Spread evenly over the base. Top with a handful of peanuts, press them in slightly them place the slice in the freezer to firm up enough to slice neatly. A couple of hours should do it. Melt the chocolate and drizzle as desired. I like to keep this slice in the freezer, and then leave it to soften at room temp for 5 minutes or so.
