Vegan Caramel Nut Bars

If you fancy making something sweet but aren’t interested in cakes or muffins then these raw twix bars are the perfect solution. Made from simple, nutritious ingredients they are packed full of healthy energy and protein to create the ultimate homemade treat to fuel your body. We used our PureHarvest Organic Rice Malt Syrup and PureHarvest Smooth Almond Spread to create the ultimate raw vegan snack.

Ingredients

Base

  • 1/2 cup cashews
  • 1/4 cup coconut flour
  • 1/2 cup desiccated coconut
  • 1 Tbsp Pureharvest Organic Almond,
  • 1/4 cup Pureharvest Organic Rice Syrup,

Caramel

  • 1/3 cup Pureharvest Almond Butter
  • 1 Tbsp coconut oil
  • 1/4 cup Pureharvest Organic Rice Syrup,
  • 1 tsp vanille extract
  • 1/2 tsp sea salt

Chocolate Coating

  • 100 g dark chocolate

Instructions

  1. For the base: Place all the ingredients for the base into a food processor and blitz until it begins to come together into a mixture. Press into one half of a square 20X20 tin to create a thin even layer.

  2. For the filling: In a small bowl mix together the caramel ingredients using a wooden spoon. Spoon over the top of the base and smooth out with the back of a spoon. Place this in the freezer to set firm, at least an hour.

  3. Assemble: Cut into 8 even rectangles. Melt some dark chocolate and dip the rectangles in the chocolate to create a thin chocolate coating. Once covered in chocolate place into the fridge or leave in a cool place to allow the chocolate to set. *

Recipe tips

Store in the fridge and consume within a week. Alternatively, you can store them in the freezer and they will last much longer

To make it slightly more simple, instead of making individual chocolate bars do not cut slap into individual rectangles and simple pour chocolate on top of the caramel layer. Leave to set and then cut up into scare slices.
