These are so quick and simple to make. With only three ingredients they are the perfect nut free lunch box treat for the kids as well as a great afternoon snack.
Place the dried apricots, coconut and rice malt syrup into the food processor and blitz until well incorporated
Place the mixture in between two sheets of baking paper and roll out into a rectangular shape, approximately 1.5cm thick
Cut into 3cm X 4cm pieces and coat with the extra desiccated coconut. ENJOY!
Ps. You can also make these into little apricot balls if you prefer. Put your creative hat on and see what you can come up with :)
These will store in the fridge in an airtight container for a couple of weeks or in the freezer for up to 3 months (that's if the kids don't get to them before that).
