A delicious mouthful of peanutty, coconut goodness. Sweetened with just a little rice malt syrup it’s a great energy kick for when those afternoon hunger pangs get the better of us.
Place all the ingredients into a food processor and blitz until it begins to come together into a mixture.
Get a bowl of warm water ready. Slightly dampen your hands so that the mixture doesn't stick to your hands and start to bring the mixture together into walnut sized balls.
Stick your thumb into the centre of the ball and create a hollow section, spoon in a dollop of peanut butter and close the top around the filling. Roll and reshape into a ball and place to the side. Repeat for the remaining balls.
Place the balls into the freezer while you prepare the chocolate.
Melt the chocolate, roll the balls in the melted chocolate to coat evenly. Sprinkle the desiccated coconut over the chocolate coated ball and place onto some baking paper/beeswax wrap. Repeat for the remaining balls.
Place the finished bliss balls into the fridge. They will keep in the fridge for about a week (if you have enough discipline to ration them that long).
