Veggie Gyros Bowl

With September over, we are officially in the middle of Spring and on the fast track to those warmer Summer months. In the warmer months of the year there is nothing we love more than tucking into a delicious bowl of Mediterranean flavours. This Veggie Gyros inspired bowl is the perfect dish to share with your friends and family.
2 eggplants, cubed
1 pinch sea salt
2 tsbsp Greek spice mix
1 cauliflower, small
1 tbsp red wine vinegar
1 tbsp hot water
1 tomato, large
1 Lebanese cucumber, cubed
1/2 cup flat leaf parsley, coarsely chopped
1/3 cup Hommus
1/3 cup Tzatziki
4 mini flatbreads
1 lemon, cut into wedges
Combine the red onion, red wine vinegar, hot water and salt in a small bowl and put to the side.
Place the eggplant in a large bowl, drizzle with olive oil and coat with the Greek spice mix.
Place on a baking tray and roast for around 25 minutes or until the eggplant is soft and lightly charred.
Do the same with the cauliflower.
Chop up the tomato, cucumber and parsley.
Assemble the bowl.
Place heaped spoonfuls of the eggplant, cauliflower, tomato and cucumber in a medium sized bowl. Dollop hummus and tzatziki in the centre of the bowl.
Garnish with parsley, red onion pickles and lemon.
Serve with warm flatbread
