Waffles are a fantastic alternative to pancakes if you want to change it up a little. However, if you don’t have a waffle maker you can easily cook this batter like you would a pancake batter and it will be just as delicious.
Add the ground flax and water into a small bowl and set aside, it will thicken up.
Add the soy milk and apple cider vinegar into a bowl and stir to combine, set aside for 5 minutes (this created vegan buttermilk).
In a separate bowl add the flour, baking powder and salt to a bowl and whisk to combine.
Pour in the buttermilk, flax egg and maple and fold to combine.
Heat waffle maker with a little oil. Add in about 1/4 cup worth of the batter. Cook waffles for about 4-5 minutes.
Serve with some coconut yoghurt, fresh blueberries, maple syrup and a sprinkle of cinnamon sugar.
