High Protein Nourish Bowl

• 1 cup Cooked black or brown rice
• 200 grams Tempeh, cubed
• 1/2 tsp onion powder
• 1 tbsp PureHarvest Maple Syrup
• 2 tbsp PureHarvest Tamari
• 1 tbsp olive oil
• 1 cup shredded cabbage
• 1/2 cup edamame beans
• 1/2 cup cucumber, cubed
• 1/4 cup carrots, shredded
• 1/4 cup sliced avocado
• 1 tbsp hemp seeds
• fresh coriander for garnish

Dressing

• 1/2 cup tahini
• 1 lime, juiced
• 1 tbsp sesame oil
• 1 tbsp rice wine vinegar
• 1 tbsp rice syrup or maple syrup
• 1/2 cup water

1. In a bowl, marinate the tempeh triangles in tamari, onion powder and maple syrup for 10 minutes.

2. Heat olive oil in a skillet over medium heat. Add the marinated tempeh and cook for 3-4 minutes on each side until crispy and browned. Remove from heat.

3. Add shredded cabbage to a bowl with a drizzle of olive oil and a sprinkle of salt and massage for a minute to break down.

4. In a large bowl, assemble the nourish bowl by layering cooked rice, cabbage, carrots, cucumber, sliced avocado, and the cooked tempeh.

5. In a separate small bowl, using a whisk or an immersion blender, add all the tahini sauce ingredients and blend/whisk until smooth.

6. Drizzle the lemon tahini dressing over the nourish bowl.

7. Sprinkle hemp seeds and fresh coriander on top for garnish.
