Spelt Pancakes

• 150 g spelt flour
• 2 tbsp coconut sugar
• 1 tsp baking powder
• 1/4 tsp sea salt
• 200 ml Pureharvest Organic Oat

Toppings

• Fresh fruit
• Drizzle of Pureharvest Organic Maple Syrup

1. Whisk the flour, coconut sugar, baking powder and salt together until well combined. Slowly add the milk and mix until a smooth thick batter forms.

2. Heat a small amount of oil in a frying pan over medium heat. Add about 1/4 cup batter into the pan at a time to make the pancakes. Do this in batches of about 1-2 at a time. Cook for 3-4 minutes on the first side and until bubbles appear on the surface and the edges are set. Flit and cook for a further 1-2 minutes on the second side.

3. Serve with your favourite toppings. We love keeping it simple with fresh fruit and a drizzle of maple syrup.
