In a large bowl, whisk together all ingredients (apart from the bread of course!).
Allow mixture to thicken for 8-10 minutes, and then give it another quick whisk. This will allow the flax seeds to work their magic and thicken up the mixture.
Heat a drizzle of olive oil or vegan butter in a non-stick pan on medium heat until it’s sizzling and ready to go.
Dip your slices of bread into the mixture one by one and let the bread soak up all the flavours from the wet mix.
It’s time to toast! Get your bread in the pan and Cook for 2-3 minutes each side, or until golden brown. Be sure not to overcrowd your pan!
