Best Ever (Vegan) Potato Salad

For all those barbeques, pot lucks and picnics, having a good potato salad recipe up your sleeve is pretty handy. But having a great one? Well, that’s just even better.

This is the potato salad recipe that you didn’t even know you were looking for. Oh, and did we mention it was vegan?

1 kg New or Chat potatoes
1 bunch fresh chives
finely chopped

2 tbsps Vegan Mayonnaise

2 tbsps ,
1 tbsp lemon juice
1-2 tbsps good quality Dijon mustard
preferably organic and sugar free

Peel potatoes and cut into 5cm pieces. In a large pot, gently bring potatoes to the boil and cook until just tender.

While the potatoes are cooking, prepare the dressing. Combine vegan mayonnaise, olive oil, lemon juice and Dijon mustard in a bowl and whisk with a fork until well combined.

When tender, drain the potatoes thoroughly and place in a large bowl. Pour over the dressing, add the chopped chives and give the salad a good mix. Season with salt to taste and enjoy.
