Vegan Plum Slice

This vegan slice is a great one to whip up on a Sunday afternoon with the kids so that you have a delicious treat waiting for you throughout the week. It has a gooey, sweet centre sandwiched between two biscuity, crumbly layers!

There is also a secret ingredient. This incredible slice is actually made from PRUNES. That’s right the filling is a sweet, slightly sticky and ever so delicious prune mixture. Trust us, don’t knock it until you try it 🙂

2 cups prunes,
pitted and roughly chopped
1 cup water
1 tsp vanilla extract
1/2 cup Pureharvest Organic Extra Virgin Olive Oilor melted Coconut Oil,
1/2 cup Pureharvest Rice Malt Syrup,
1 cup Pureharvest Organic Wholemeal Flour,
1 cup desiccated coconut
1 1/2 cups rolled oats
1/2 tsp baking powder
pinch of salt

Preheat oven to 160°C and grease and line a 20cm square cake tin.
Combine the prunes and water in a saucepan over a medium heat. Cook, stirring occasionally for 10 minutes, until the prunes have absorbed the water. Add vanilla and set aside to cool.
In a medium sized bowl combine the oil and Rice Malt Syrup and whisk until well combined. Sift in the flour and bicarb soda, and then stir in the coconut and oats.
Press half of the mixture into the base of the cake tin. Spread the prune mixture evenly over the base and finish by crumbling the remainder of the oat mixture over the prunes.
Bake for 35 – 40 minutes or until golden brown.
Allow to cool slightly before cutting into squares. Delicious served hot or cold.
